beef that is pasture raised, fattened on a total grass diet. no nitrates added.  nitrates are naturally occurring. charging 1.1 lbs because it comes in packages just over one pound 

 this is NOT SLICED end pieces / chunks of the Bologna roll.  i found it under 3 lbs.

those nitrates come from celery salt.  which, essentially has the potassium nitrate in it, and thus it cures without being 'cured' legally.  you need to deep dive this to understand it.
